Drop d/patches/do-not-phone-home.patch

* Drop d/patches/do-not-phone-home.patch: It disabled all sort of
  connections to the developers website. It's still open to the user to
  disable all downloads in the UI. Upstream kindly asked me to make that change.
* Add d/patches/disable-version-update.patch: It's not helpful to propose
  version update for distribution packaged software which might end up in
  a stable release for some years.

cleanup mimetype handling

After re-reading Debian Policy 9.7 I realized
that shipping the .desktop file nowadays is enough.
Thus we can delete the custom mailcap mimetype definition.
In addition to that we can create the mimetype icon link for
the hicolor theme via dh_link instead of calling ln -s in the
package build manually.

Clarify / update changelog

Link the default vym hicolor icon also for the mime type

Allows some file manager to display the vym icon for .vym
files. Seems to work for thunar and dolphin when using the
default hicolor theme. Does not work right now for Gnome which
seems to have its own theme.
